Welcome! A couple of notes

• If you’re not using crokkia, set the mix percentage to zero and move on.

• If you bought a 12.5 kg bag of Crokkia, just use the amount of Crokkia specified in the first line under “Means You Need”

• If you don’t have ready-made Crokkia, you will have to make your own, blending “00” flour, rice flour, and toasted wheat germ in the amounts specified in the “Crokkia Calculation” section.

• The Crokkia Blend field changes the ratio of ingredients within the Crokkia, but not the amount of Crokkia in the whole dough, which is a set amount.
