Welcome! One thing to note:

• If you’re not using crokkia, set the mix percentage to zero. The Crokkia Mix percentage is the percentage of the toasted wheat germ and rice flour mix combined with “00” flour. The default is one part mix to three parts “00” flour. Changing the percentage will not change the percentage of crokkia that goes into the dough. It only changes the makeup of the crokkia.
